Both are solvent-jointed once — the difference is what happens years later when the valve needs service. A union is a threaded collar you can unscrew by hand or wrench; where you place it decides whether maintenance means a spanner or a saw.

Rule of thumb: if a technician will ever need to remove that valve — pump stations, filter batteries, anything that clogs or wears — put a double union there. Everywhere else, the standard red/blue-handle valve keeps the bill of quantities lean.
